Ingredients :
4 emptied mackerels
4 spoons of olive oil
3 spoons of vinegar
120 gr of butter
2 shallots - 1 lemon
4 blades of parsley, 2 blades of tarragon, Salt, Pepper
Preparation of the marinade :
- Chop the shallots, parsley and tarragon,
- Mix the salt, pepper, vinegar, oil, shallots, parsley and tarragon together,
- Put the mackerels into the marinade, then the all preparation to the fridge.
Preparation of the lemon butter :
- Mix the butter with pieces of lemon peel and half the lemon juice, add some salt and pepper,
- Keep the butter cool.
Cooking :
- Heat in the oven thermostat 7 (210°C) for 15 to 20 mn,
- Serve with pieces of lemon butter.
