Scallops cooked au gratin

Ingredients :
8 scallops
200 gr of cultivated mushrooms
2 shallots - 1 lemon
10 cl of white wine
150 gr of cream
4 dessertspoons of bread-crumbs
Perslay, Butter, Salt, Pepper

Preparation :
- Clean and rinse the scallops with cold water,
- Brown the choped shallots with the butter then pour in the white wine and boil ,
- Add 10 cl of water and let simmer for 15 mn,
- Add the cream and reduce to half of all,
- Drop the lemon juice on the sliced mushrooms, then brown them with some butter,
- Brown the scallops and the mushrooms for 2 to 3 mn stiring,
- Lay the preparation in the buttered scallop shells,
- Coat with the white wine sauce and sprinkle with the bread-crumbs,
- Let brown for 3 to 4 mn before serving.
